HAPPY BIRTHDAY FRANCESCO

HAPPY BIRTHDAY TO YOU

HAPPY BIRTHDAY TO YOU

HAPPY 14TH BIRTHDAY DEAR SWEET FRANCESCOHAPPY BIRTHDAY TO YOU...

Oh how time flys...just yesterday my baby was born and today he is 14 years old.

I really have no idea where all the time goes. I blinked my eyes and it just passed. I must remember not to blink any more~ I can't afford to jump another 14 years just yet. I must admit ...I miss those early days when my son was young and squeezable...but it is a real joy to spend time with this remarkable young man that has developed. He is mature and intelligent -he has opinions about things and I love watching him express his thoughts about anything! I sure do sound like a proud Mommy...well I am! Happy Birthday Francesco. I love you!

Natures Glorious Bounty

I just love going out into the garden and finding little gifts hiding under great big leaves. I love picking plump red tomatoes (I think I eat more than make it into the basket).
I get inspired to put it all together and enjoy it as soon as possible.

This year I planted Nasturtiums...they are so yummy in my salad. They make me feel like I am having an exotic salad.
That peppery taste is so delicious!
I finally got some tomatoes ...I thought everything would be lost because we have had so much rain. Some were in the ground- they will have to ripen on the window sill!
I made a quick mix of all our glorious garden gems. It was a great side dish with our grilled chicken and salad for dinner.
(Onions, zucchini, peppers, tomatoes, green beans and potatoes -fresh purple basil and some fresh oregano and a touch of freshly ground sea salt) I didn't season too much because I didn't want to loose the fresh from the garden taste. It was so good!

Another Spectacular Weekend!

Back to the Jersey shore this weekend.
The weather was spectacular...NO RAIN!

We of course went crabbing again- but the crabs were no where to be seen.
I don't know if its the beginning of the molt...the full moon ...or they just knew we were there!

Luckily we did get enough to make another spectacular dinner though.

My son was eager to fish and he caught several small flounder and a few small snapper. He was thrilled!

Chef's Silvio and Rosalba prepared another unbelievable dinner.

This time we were right there to watch the magic happen right before our eyes!

Silvio says that there is something special about the way you saute the onions. When they are done just right the sauce explodes with that special flavor!

I returned home with sore cut up lips from sucking the meat and sauce out of
every nook and cranny of those delectable little crabs! It was worth every bit of pain!

Thank you again Silvio and Rosalba...
