Now I have to admit- I don't have a recipe...
I sort of put this together based on a friends recipe.
5 plum tomatoes diced tiny
half of a red onion tiny dice
half of a red sweet pepper tiny dice
5 slices of jalapeno pepper diced
cilantro
salt to taste
Thank you Justin it came delicious- we ate it with crackers and we also used it as a topping for
our Rib Eye steaks....yum!

It was really good- everyone loved it. I am so sorry I don't have measurements...I put it together on a taste as I go method! You cant go wrong with something like this- just add more of what you feel is missing
I have a hard time writing a lot of my recipes down for someone because I cook with "a little of this" and "a little of that" until I think it tastes good.
Your recipe looks so light and refreshing. Perfect for the humid days that were are experiencing here in NC.
BTW, I read your comment on my blog about making fried pickles with hot peppers. I love that idea! I've left a couple of questions for you on my blog.
I'm really enjoying your blog so I'm adding it to my blog roll!
It looks refreshing! :)
