MY POTATO ADVENTURE


This is my entry for the Cooking with Alicia & Annie Blog Event
for November! (deadline for submissions November 30th) .
I am also entering this in the Potato Ho Down being hosted by Baking Delights on November 19th.










from Alicias site...




2 cups mashed potatoes
2 tbsp flour
sprinkle of parsley
2 eggs
1 tsp onions chopped


Instructions:
Mix all together and fry in in skillet over low heat in a little oil or butter.

You could make these as thick as you want, I suppose.

*NOTE:I altered these a bit.
I added parmesan cheese and mozzarella cheese.Once they were mixed I shaped them into cylinders and rolled them in egg then seasoned bread crumbs. I arranged them in a casserole dish that I sprayed with cooking spray. I also sprayed the potato cakes then put them into a 350* degree oven for about an hour. They came a little lighter since they were not fried and the outer crust was still golden.

Delicious!

Gotta love a good potatoe!

The Power of Pink Challenge!


In honor of October being National Breast Cancer Awareness month, Beantown Baker presents a challenge:make something PINK .
It can be anything as long as it's pink.

Here are the rules:
1. Make something, anything, that comes out pink - use any ingredients you want (you can double this up for another blogging event if you'd like)

2. Post your pink food by October 31

I made cupcakes PINK of course.
I made DEATH BY CHOCOLATE cupcakes
4 eggs
1/2 c. oil
1 c. sour cream
1/2 c. water or 1/4 c. water with 1/4 c. Kahlua
1 boxed cake mix without pudding in the mix
1 sm. box instant chocolate pudding
12 oz. pkg. chocolate chips
With your electric mixer, combine eggs, oil, sour cream, water, cake mix and pudding; mix well.
Add in chocolate chips. Pour into muffin papers.
Bake at 350 degrees for 20 minutes.
I then iced them with store bought vanilla icing that I tinted pink.

"Cooking with Annie & Alicia" - Double Chocolate Muffins


I altered the recipe a bit- I couldn’t add the pecans because my son won’t eat nuts. I also used dark chocolate bits instead of white chocolate because I didn’t have the white ones.
The recipe was fairly easy to make but the finished product was a bit dry.
If I make them again I think I would alter the cooking time and maybe the temperture instead of 20 minutes at 400 degrees I would cook them for 20 minutes at 350 degrees.


Double Chocolate Muffins


2 cups plain flourpinch salt1 Tbsp baking powder1/2 tsp allspice1/2 cup brown sugar1/2 chopped pecans2 eggs2/3 cups milk1 tsp vanilla3 ozs butter melted3-1/2 ozs Nestle Chocolate Melts melted4-1/2 ozs Nestle White Bits


Instructions :
Sift first 4 ingredients into a bowl. Add brown sugar and pecans. Combine eggs, milk, vanilla, melted butter and Choc Melts, add to dry ingredients, mix lightly. Add White Bits, stir to combine. DO NOT OVERMIX, it should be lumpy.
Fill a greased muffin pans 2/3 full and bake at 400 degrees F for 20-25 minutes.


NOTE: Nestle's Melts are cooking chocolate that come in a button shape, easier to melt and weigh than blocks. Nestle's Bits are morsels of pure chocolate, so they hold their shape when baked.

Baking for Breast Cancer Awareness


October is National Breast Cancer Awareness Month .
It is so important to be aware of the warning signs of breast cancer.
The warning signs of breast cancer include: (taken from the Web-MD site)
· Lump or thickening in or near the breast or in the underarm that persists through the menstrual cycle.
· A mass or lump, which may feel as small as a pea.
· A change in the size, shape or contour of the breast.
· A blood-stained or clear fluid discharge from the nipple.
· A change in the feel or appearance of the skin on the breast or nipple (dimpled, puckered, scaly or inflamed).
· Redness of the skin on the breast or nipple.
· An area that is distinctly different from any other area on either breast.
· A marble-like hardened area under the skin.

These changes may be found when performing monthly breast self-exams. By performing breast self-exams, you can become familiar with the normal monthly changes in your breasts.

Breast self-examination should be performed at the same time each month, three to five days after your menstrual period ends. If you have stopped menstruating, perform the exam on the same day of each month.

I know I cheated -first with the boxed cake mix then with the icing!!!
I did this quick and had to hide them until I took my photos because the "Sticky Fingers" in my house kept attempting to steal them!

The National Breast Cancer Foundation estimates that each year, over 200,000 women will be diagnosed with breast cancer and over 40,000 die. One woman in eight either has or will develop breast cancer in her lifetime. Approximately 1,700 men will be diagnosed with breast cancer and 450 will die each year.
If detected early, the five-year survival rate for breast cancer exceeds 96%. Mammograms are among the best early detection methods, yet 13 million U.S. women 40 years of age or older have never had a mammogram.
The National Cancer Institute and U.S. Department of Health and Human Services recommend that women in their forties and older have mammograms every one to two years. A complete early detection plan also includes regular clinical breast examinations by a trained medical professional. Monthly breast self-exams are suggested in addition.
